My favorite part of summer

Being a foodie, I'm always staying in tune with what foods are in season and summer brings my most favorite one of all - heirloom tomatoes!

An heirloom tomato is sweeter than other varieties and is higher in vitamins A, C, K, potassium, fiber and lycopene. They're available in an abundance of shapes and sizes and add rich flavor to summer salads.

Ingredients

1/4 c Champagne or white wine vinegar
1/4 c shallots
6 ears white corn
1/2 c extra virgin olive oil
8 c arugula
5-6 heirloom tomatoes

In a large bowl, mix the vinegar and shallots together and let stand for 10 minutes. Next, cut kernels from the corn and whisk together with the olive oil and vinegar mixture. Add the arugula and toss with the dressing. Lastly, dice the tomatoes and toss gently. Transfer the salad to a large platter. Serves 8.
