Chewy Banana Oat Cookies

These cookies are courtesy of fellow Holistic Health Counselor, Stacey Weckstein. They're a great substitute for any cookie that contains refined sugar because they're sweetened with bananas, a natural sweetener. I add raisins too for extra sweetness because remember, you'll always want sweet - it's one of your taste buds. It's really just a matter of improving the quality of what you choose to eat.

Chewy Banana Oat Cookies

1 1/2 cups of rolled oats
1/2 cup oat flour
1/2 tsp salt
1/4 tsp baking soda
Pinch of cinnamon (optional)
2 Tbsp chopped raisins or nuts
1 Cup bananas mashed
3/8 cup organic canola oil

Preheat oven to 350. Mix the dry ingredients together in a bowl. In a separate bowl mix mashed bananas and oil until incorporated then add this mixture to the dry ingredients. Drop heaping teaspoons onto an un‐oiled cookie sheet and bake 10‐15 minutes.

Variations to this recipe: use 1 cup mashed sweet potato or mashed acorn squash in place of banana. You can also create other whole grain varieties by eliminating the oats and replacing with rolled wheat flakes, barley flakes, rye flakes, spelt flakes or kamut flakes.

  1. Easy, quick and delicious! Terrific breakfast cookie. I substituted apple sauce for canola oil which worked fine. May be a moister consistency and could have set a few minutes when mixed since I used 1/2 c. steel cut oats for texture. I opted for both raisins for sweetness and walnuts for Omega fatty acids. I also enhanced the overall flavor with fresh "Penzey's" spices including fresh ground nutmeg, Vietnamese Cinnamon and their "cake spice", sprinkling a little on top before baking. Quite satisfying!
